• Posted by Fork & Pen On March 9th, 2012 / 13 Comments I really don?t like most vegetables. I don?t like them because they don?t appeal to me. I sometimes don?t like the taste or texture. But there are a few vegetables that I do like. Crunchy carrots and hummus are good. I also like mashed cauliflower. It looks a lot like mashed potatoes. I like the taste of cauliflower but not the texture, when it?s mashed it?s very good. I also enjoy broccoli with garlic, salt, and olive oil. I also have discovered a new way of eating string beans that are mixed with coconut oil. I like it because you can kind of taste a hint of coconut and it?s tasty. Even so, my mother sometimes has to remind me to eat my vegetables because I just don?t really like them. So I was really surprised when I first tasted Bread Salad. It is a salad (and I don?t really usually like salad), and it tasted good! I first discovered Bread Salad when my family went to stay at my Grandparents lake house on Upton Lake, in upstate New York. We went out to dinner at a restaurant called Aurelia in Millbrook NY, and my mother ordered the Bread Salad. I saw it and felt like trying it. There were capers, cherry tomatoes, mozzarella, cucumbers, olives, red onions, and cubes of bread (obviously) mixed with oil and vinegar. It was colorful, and with the first bite it made me feel like I was eating a type of healthy food that I really liked. The cherry tomatoes were a shock of flavor. The bread was crunchy and chewy, and had a lot of the flavor from the oil and vinegar. The capers were nice and salty. The cucumbers were crunchy. The perfect combination. I LOVED IT. When we got home from the lake house, I asked my mother to try and make this salad. My mother was able to pretty much duplicate it. We still have it. I still love it. I still love the Bread Salad as much as when I first tried it. If you?d like to make this salad, below is the recipe my mom came up with to duplicate what I had at Aurelia. I hope you like it as much as I do. By the way, the rest of the meal at Aurelia was fantastic. I tried halibut with rosemary, mussels, and crab cake. This place is highly recommended if you are ever in Millbrook NY.
